German Cheesecake (Käsekuchen)
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar (for crust)
- 1/2 cup unsalted butter, cold
- 1 egg (for crust)
- 4 cups Quark (or substitute with full-fat Greek yogurt)
- 1 cup sugar (for filling)
- 4 eggs, separated (for filling)
- 1/4 cup cornstarch
- Zest of 1 lemon
Instructions
- For the crust, combine flour and sugar. Cut in butter until crumbly. Mix in the egg. Press into the bottom and sides of a 9-inch springform pan. Chill.
- Preheat oven to 350°F (175°C).
- For the filling, beat Quark, sugar, egg yolks, cornstarch, and lemon zest until smooth.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the Quark mixture.
- Pour the filling into the prepared crust.
- Bake for 60-70 minutes. The center should be almost set.
- Turn off the oven and let the cake cool inside the oven with the door ajar for 1 hour to prevent cracking. Chill before serving.
