German Cheesecake (Käsekuchen)

A slice of German Cheesecake

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar (for crust)
  • 1/2 cup unsalted butter, cold
  • 1 egg (for crust)
  • 4 cups Quark (or substitute with full-fat Greek yogurt)
  • 1 cup sugar (for filling)
  • 4 eggs, separated (for filling)
  • 1/4 cup cornstarch
  • Zest of 1 lemon

Instructions

  1. For the crust, combine flour and sugar. Cut in butter until crumbly. Mix in the egg. Press into the bottom and sides of a 9-inch springform pan. Chill.
  2. Preheat oven to 350°F (175°C).
  3. For the filling, beat Quark, sugar, egg yolks, cornstarch, and lemon zest until smooth.
  4. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the Quark mixture.
  5. Pour the filling into the prepared crust.
  6. Bake for 60-70 minutes. The center should be almost set.
  7. Turn off the oven and let the cake cool inside the oven with the door ajar for 1 hour to prevent cracking. Chill before serving.
